The good news is it's one of the more beginner-friendly website platforms out there if you want 100% creative drag-and-drop freedom without needing to know how to code, and I include video tutorials with every template so you're not left figuring it out alone. Do I need to already have Showit to use these templates?

Very. The templates are built to be a strong starting point, not a cage. You'll swap in your colors, fonts, photos, and copy and it should feel like yours pretty quickly. If you want it taken further, my template customization package below exists for exactly that.
How customizable are these templates really?

You can, but I'll be honest with you... a template works best when you already have your visual identity locked in. Colors, fonts, a logo. Without that foundation the customization gets tricky. If you're not there yet, starting with my branding package Your First Tattoo might make more sense.
I don't have a brand yet. Can I still buy a template?
